Bread Bowls

1 pkg active dry yeast
2 tbsp sugar
3/4 cups warm water (105F to 115F)
3 cups Redued Fat Bisquick mix

Dissolve yeast and sugar in warm water in large bowl. Stir in Bisquick mix until dough leaves side of bowl and forms a ball. Turn dough onto surface lightly dusted with Bisquick mix, gently roll in Bisquick mix to coat. Knead 1 min or until smooth. Cover and let rise 10 min.

Heat oven to 275F. Grease outside of five 10oz. custard cups. Place cups upside down on large ungreased cookie sheet. Divide dough into 5 equal parts. Pat or roll each part into 7in circles. Shape circles over outside of custard cups. (Do not curl dough under edges of cups)

Bake 15-18min or until golden brown. Tap custard cups to loosen bread bowls. Cool 3min; carefully lift bread bowls off custard cups. (Custard cups and bread will be hot). Cool bread bowls upright on wire rack. Fill bowls as desired.

Makes 5 servings.

Quick Chicken Pasta Salad

I wanted to make a quick meal for myself and use leftovers in the fridge and this turned out to be a wonderful meal. Could also be used for a great side dish for a party or get together. Also so inexpensive too!

Prep: 5min.
Total Time: 15min.

1 pkg. Suddenly Salad Mix (got my 2pk at Dollar Tree...whoo hoo 50cents each)
3 chicken breasts
3 celery sticks
Parmesan Cheese (optional)

Cook Suddenly Salad as directed on box. Meanwhile in saucepan cook the chicken breasts until fully cooked through. Cut into bite-size peices and set aside.

Chop the celery, not too small.

In the bowl you prepared the Suddenly Salad pasta mix, per directions on the box add in the celery and chicken and mix well. Then add in Parmesan Cheese if desired.

*Another alternative that I like better is to make it, then refrigerate overnight. Then heat up in the microwave and it tastes much better in my opinion.

Makes 2 servings.

"Beary-Berry" Banana Split

This is a great snack for those little picky eaters of yours or just a fun snack for yourself. My kids eat the same things everyday most of the time. This has three things they love! This would even be great for a kids party too!!

1 small banana, split lengthwise
1 container (6oz.) strawberry yogurt, or to your taste
1/4 cup Teddy Grahams Cinnamon Graham Snacks

Place banana in dish; top with yogurt and graham snacks.

Makes 1 servings.

Party Ham Sandwiches

2 pkg. baked dinner rolls (24 rolls), cut in half
2 pkg. )6oz. each) Oscar Mayer Deli Fresh Ham
1 pkg. 8oz. Sharp Cheddar Cheese
1/2 small red onion, cut into 24 thin slices
2 Tbsp. butter, melted
1 tsp. poppy seed

Heat oven to 350 degrees.

Place bottom halves of rolls in 15x10x1-inch pan. Top with ham, cheese, onions and tops of rolls.

Mix remaining ingredients; brush onto sandwiches. Cover with foil.

Bake 20min. or until heated through.

Makes 24 servings.

Delicious Dill Potatoes

3-5lbs bag baby red potatoes
Sarah's Seasoning
3 tbsp dill weed
olive oil

Preheat oven to 400F.

Boil potatoes in pot for approx 10-15min. Potatoes are ready when you can put a fork in them and they almost slide off, but still a bit stiff. Cut potatoes into quarters/bite size pieces.

In a 9x9in pan coat bottom with olive oil. Place cut potatoes in and toss to coat. Add dill weed and Sarah's Seasoning to taste and toss again to coat.

Place in 400F oven for 15-20min, stirring occasionally. Serve hot with your favorite main dish.

Makes 4-5 servings.

Juicy Chicken

Total Time: 45min.

4 chicken breasts
1/2 onion sliced
Sarah's Seasoning
Sarah's Seasoning With a Kick
1 tbsp. cilantro
1/2 cup apple juice
1/2 cup water
olive oil

Slightly coat bottom of saute pan with olive oil. Add onion and chicken over medium heat. Lightly coat the chicken with Sarah's Seasoning Original, be sure to season both sides of the chicken.

Cook for 5 min. Add cilantro, apple juice and bring to a boil. Cover and cook fro 5 min.

Uncover and cook chicken until brown and thoroughly cooked through, be sure to reduce heat. The onions will start to caramelize, so this is when you need to add the water. Cover and continue cooking, flipping chicken occasionally, this will allow the juices to penetrate the chicken.

Serve over pasta or rice.

Makes 4 servings.

Vanishing Oatmeal Raisin Cookies

Gotta have Oatmeal Raisin cookies in the house!!

From Quaker Oats
Prep: 10min.
Total Time: 30min.

1/2 pound (2 sticks) margarine or butter, softened
1 cup firmly packed brown sugar
2 eggs
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 cups Quaker Oats (quick or old fashioned, uncooked)
2 cups raisins (original recipe calls for 1 but we Love raisins!)

Heat oven to 350F. Beat together margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well.

Stir in oats and raisins; mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheets. I also use the ball scooper from Pampered Chef, works so easily!

Bake 10-12 min or until golden brown. Cool 1 min. on cookie sheet; remove to wire rack.

Makes about 4 dozen cookies.

Fantastic Grilled Corn on the Cob

A really yummy and easy way to liven up that corn on the cob!!

1/4 cup butter, softened
2 tbsp. Kraft 100% Grated Parmesan Cheese
1 tsp. chopped fresh parsley
4 ears of corn

Preheat grill to medium-high heat. Husk corn; remove silk. Rinse corn. Wrap each ear in foil.

Grill corn 15 to 20 min. or until tender, turning occasionally.

Remove corn from grill; unwrap.
Mix butter and Parmesan Cheese and parsley. Spread onto corn.

Makes 4 servings.

Sausage and Apple Stuffing

This one is really good, with the sweet apples makes a nice change for the stuffing. Seems like a lot that goes in, but fairly easy to make.

From Food Network

2 sticks plus 3 tbsp. butter, divided
2 cups water
2 large bags of your favorite dried cornbread stuffing mix
1 pound pork sausage (I used Italian sausage and take out of casings)
1 large onion, diced
3 cloves garlic, minced
2 stalks celery, diced
1 tsp. dried thyme leaves
1 tsp. dried sage leaves
1 cup chopped walnuts
3 medium apples, cored, sliced
2-3 cups low sodium canned chicken broth

In large pot melt 2 sticks butter in water. When melted add dry stuffing mix, stirring to incorporate liquid, set aside.

In large saute pan set over medium-high heat melt 1 tablespoon butter and add sausage. With a wooden spoon break up sausage and saute until lightly browned and cooked through. Transfer sausage to paper towels to drain. In the same pan melt remaining butter and saute onions with the garlic, celery, thyme, and sage until onions are translucent and celery is crisp and tender. Add walnuts and saute for 1 minute. Add apples and saute for one minute more. Remove from heat. Combine stuffing mix with sauteed ingredients and stuff turkey. Roast turkey as usual.

Alternatively fill a 10x15x2 inch pan with the stuffing, moisten with chicken broth, and bake in a preheated 350 degree oven, covered with foil for 30 minutes. Remove foil and bake until top is lightly browned, about 15 minutes more.

Makes 4 servings.

Chive and Onion Mashed Potatoes

2 lb. potatoes, peeled, quartered (about 6 cups)
1/2 cup milk
1 tub (8oz.) Philadelphia Chive & Onion Cream Cheese Spread
1/4 cup Kraft Ranch Dressing

Place potatoes and enough water to cover in 3-qt. saucepan. Bring to a boil.

Reduce heat to medium; cook 20 to 25min. or until tender. Drain.

Mash potatoes, gradually stirring in milk, cream cheese spread and dressing until light and fluffy. Serve immediately.

Makes 10 servings.

Make-Ahead Mashed Potatoes

Total Time: 1hr. 30min.

4lb. white or Yukon Gold potatoes (about 10), peeled, cubed
1 cup sour cream
1/2 cup Philadelphia Cream Cheese
2 tsp. onion powder
1 slice Oscar Mayer bacon
2 green onions, sliced

Cook potatoes in large saucepan of boiling water 10-15 min. or until tender; drain. Place potatoes in large bowl. Add next 3 ingredients; mash until creamy.
Spoon into lightly greased 2-qt. casserole; cover with plastic wrap. Refrigerate up to 2 days. Remove from refrigerator 30min. before baking. Discard plastic wrap.

Heat oven to 350 degrees. Bake potatoes 1 hour or until heated through. Sprinkle with bacon and onions.

Makes 16 servings.

Peanut Butter and Fudge Swirl Pie

We love peanut butter at our house so this one I have to keep on hand. An easy quick dessert pie for any occasion.

Prep: 15min. plus refrigerating

1 pkg. 8oz. Philadelphia Cream Cheese, softened
1/2 cup sugar
1/4 cup creamy peanut butter
2 cups thawed Cool Whip Whipped Topping
1 Oreo Pie Crust 6oz.
1/4 cup hot fudge ice cream topping

Beat cream cheese, sugar and peanut butter in large bowl with mixer until blended. Gently stir in Cool Whip until blended.

Spoon into crust; drizzle with fudge topping. Swirl gently with knife.

Refrigerate 4 hours or until firm. Refrigerate leftovers.

Makes 8 servings.

Cosmopolitan Jell-O Cups

These look really really good! I have not tried them yet but I think for the holidays I will. Anything with Jello and Cool Whip does a body good!

1 pkg. 30z. Strawberry Jell-O
1 cup orange Sherbet
Cool Whip whipped topping

Add 1 cup boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved.

Stir in sherbet until melted. Pour into 4 martini (or fun glasses that you have).

Refrigerate 2 hours or until firm. Top each with 1 Tbsp. Cool Whip just before serving.

Makes 4 servings.

"Berrylicious" Smoothie

Gotta love smoothies anytime! And my favorite of course is strawberries. Here is a great one and sickening easy!

1 container 6oz. strawberry low-fat yougurt
1 packet .27oz. Kool-Aid Singles Cherry Flavor Soft drink mix
6 strawberries
1 cup ice cubes

Blend all ingredients in blender until smooth.

Makes 1 serving.

Cheddar Chicken and Potatoes

To die for! This recipe is amazing! and sooo simple to make, with 3 kids this is a great meal to get out on the table. It's from Kraft Food & Family Magazine, which by the way I'm very upset that I won't be getting anymore because now they are going to charge a subscription!! WTH?

Prep: 5min.
Total Time: 27min.

4 slices Oscar Mayer bacon
1lb. boneless skinless chicken breasts
4 cups frozen diced potatoes with peppers and onions, thawed
4oz. Kraft shredded Sharp Cheddar cheese

Cook bacon in large skillet on medium heat 5min. or until crisp. Remove bacon from skillet to paper towel; discard drippings in skillet.

Add chicken to skillet; cook 5min. on each side or until done. Remove chicken from skillet; cover to keep warm. Crumble bacon. Add to skillet with potatoes; cook and stir 5min. or until heated through.

Place chicken over potatoes; top with cheese. Cover; cook 2min. or until cheese is melted.

Makes 4 servings.

Corkscrew Chicken Caesar Salad

Emptying the pasta box I found this great recipe on the back and it sounds so yummy, I haven't tried it yet but wanted to get it into my blog before I forget. (Can you tell I've been slacking?)

Prep: 10min.
Cook Time: 8-9min.
Makes: 6-8 servings

16oz corkscrew pasta )or any that you have)
1 lb. boneless skinless chicken breasts, diced
1/2lb. Roma or vine ripe tomatoes, cut into wedges
1 bunch green onions, diced
1 1/2 cups Creamy Caesar Dressing
1 cup toasted croutons
3/4 cups grated Parmesan Cheese

Cook pasta as directed on package. Rinse with cold water and drain.

Place the cool pasta in a large bowl. Stir together tomatoes, green onions and pasta; add dressing and mix thoroughly. Top with croutons and Parmesan Cheese.

Chill and Serve.

Stupidly Easy Mashed Potatoes

Ok so I bought these while at Publix because they were on sale for 50 cents each. OMG can I say hoe Stupidly easy they are?! Fine Idahoan pouch mashed potatoes. There are a bunch of varieties to choose from like, four cheese, regular, garlic, roasted garlic and Parmesan and many more. So basically here is all you have to do:

1. Buy the pouch
2. Boil 2 cups water
3. Put water in a bowl and pour pouch in
4. Stir till moistened
5. Cover for 5 min
DONE!

Hello cooking challenged can do this, heck even a kid could do this!

So go buy them and have an easy peasy dinner side!

Fettuccine Alfredo with Chicken

This dish was yummy! It was so easy to make and even Jay could make it. A great dish to warm your stomach. Another favorite from my Kraft Food & Family magazine. Very few ingredients but a restaurant style taste. A must try our family loved it!

Prep: 10min.
Total: 25min.
Makes: 4 servings

1/2 lb. fettuccine, uncooked
1 lb. boneless skinless chicken breasts, cut into strips
1 1/4 cups chicken broth
4 tsp. flour
4oz. Pliladelphia Creame Cheese, cubed
3 tbsp. Grated Paremesean Cheese, divided
1/4 tsp. garlic powder
1/4 tsp. pepper

Cook pasta as directed on package.

Meanwhile, heat large nonstick skillet sprayed with cooking spray (I use olive oil, I like it better) on medium high heat. Add chicken; cook 5-7min or until chicken is cooked through. Remove from skillet. Mix broth and flour in same skillet. Stir in cream cheese, 2 tbsp. parmesean cheese, garlic powder and pepper; cook 2 min., stirring constantly until mixture boils and thickens. Stir in chicken.

Drain pasta; place in a large bowl. Pout chicken mixture over pasta; toss to coat. Sprinkle with remaining 1 tbsp. parmesean cheese. Serve.

Strawberry Pretzel Squares

These are so great! The kids won't try it even though it has everything they LOVE in it. So more for me! Brinlee will eat it and likes it a lot so we have a huge tray just for us!! This is a great summertime snack or for even a party, a very cool dessert.

Prep: 25min.
Makes: 20 servings

2 cups finely crushed pretzels
1/2 cup sugar, divided
2/3 cup butter or margarine, melted
1 1/2 pkg (8oz each) Philadelphia cream cheese, softened
2 tbsp milk
1 cup thawed Cool Whip
2 cups boiling water
1 pkg (6oz) Jell-O Strawberry Flavor Gelatin
1 1/2 cups cold water
1 qt. (4 cups) fresh strawberries, sliced

Heat oven to 350F. Mix pretzel crumbs, 1/4 cup sugar and butter; press onto bottom of 13x9-inch pan. Bake 10min. Cool.

Beat cream cheese, remaining sugar and milk until blended. Stir in Cool Whip; spread over crust. Refrigerate.

Add boiling water to gelatin mix in large bowl; stir 2min until completely dissolved. Stir in cold water. Refrigerate 1 1/2hrs or until thickened. Stir in strawberries; spoon over cream cheese layer. Refrigerate 3 hrs or until firm.

Italian Parmesean Pita Crisps

I got this recipe during a free sample giveaway at the grocery store. It's from Crisco witht heir Olive oil, so it looked good. I was going to make this tonight with dinner, but of course by the time I got home hubby and the kids already ate and I was just too tired to make them. So...I'm going to make these tomorrow but I have my quiet mommy time right now so I'm posting it.

1 (12oz) package of 6-inch white pita bread (I bought wheat)
Crisco Olive Oil No-Stick Cooking Spray (this stuff is great!)
1/2 cup grated Parmesan Cheese
2 tsp Italian seasoning
1 tsp. garlic salt
1/4 tsp ground black pepper

Cover toaster oven tray with foil. Preheat toaster oven to 400F. (We don't have a toaster oven so I just use the oven)
Combine cheese, Italian seasoning, garlic salt and ground black pepper in a small bowl.
Cut each pita into eight wedges with kitchen scissors. Place pitas, rough side up, on aluminum foil covered tray. Genersously spray pits with Crisco Oilive spray. Sprinkle cheese mixture over pitas.
Bake for 5min or until the pits are lightly browned and crisp. Cool crisps several minutes before eating.

Serve with salsa or marinara sauce (optional)

Lemon Chicken and Rice

We have come to really like this dish. I'm glad I found it again! As usual I make substitutions to fit our likes, and I listed what I changed. Jay wants me to make this Anytime, Quinn didn't want to touch it, Bella liked it and Brinlee just inhaled it!!! It is very easy to make and good, hope you will try it. I found this one in the Kraft Food Magazine I get, they always have great recipes.

Prep: 15 min.
Total Time: 35min.

1/2 cup Kraft House Italian Dressing
1 lb. boneless skinless chicken breasts, cut into strips
1 cup chicken broth
1 cup small broccoli florets (I keep this out)
1 red pepper, cut into strips (I used green)
1 cup thinly sliced carrots
2 cups Quick Cooking Rice, uncooked
1 tsp. lemon pepper seasoning (or you can use lemon juice)
2 tbsp. Kraft 100% Grated Parmesan Cheese

Heat the dressing in a large skillet on medium-high heat. Add chicken; cook and stir 1 min.

Add broth, broccoli, red pepper and carrots. Bring to a boil.

Stir in rice. Return to a boil. Reduce heat to low; cover. Simmer 5 min. Remove from heat. Let stand 5 min. Stir in lemon pepper seasoning; sprinkle with cheese.

Makes 4 servings.

Woo hoo! I've got a a recipe blog! I ahve created this mostly for myself and family but thought, hey whynot share it with others? I hate trying to filter through my recipes, trying to find the one I wanted, or going to my parents house wanting to make a special recipe and can't remember what the ingredients are. So, hey why not a blog of all of our favorite collections.

So slowly I will post the recipes of the meals that we make the most, love, etc. Now these are some of my own, but most are ones that I find in recipes books, magazine, from family, friends, etc. I'm not claiming them as my own, jsut want to share with everyone the ones we LOVE!
